  • 1          onion chopped
  • 2-4      cloves garlic chopped
  • 1          red pepper diced
  • 1          jalapeño pepper chopped (optional)
  • 1          can crushed tomatoes
  • ¼ c      chopped fresh basil or  1-2 tsp dried
  • ¼ c      red wine (optional)

Sauté onion and garlic then add peppers and sauté until slightly soft.  Add wine then add tomatoes and simmer ½ hour to 2 hours (stronger flavour the longer it simmers)

Add fresh basil 15 minutes before serving. 

Oregano may be added if you like the flavour

You may add any meat you like.  Sauté then add onions, garlic etc.

Wine is nice added to sauce or a little wine vinegar just before adding tomatoes.

May also use fresh tomatoes but cook 1-2 hours.

If too acidic add grated carrot or a little touch of sugar or may add cream for a creamier sauce and different flavour.

Cook pasta to el dente stage.  Mix in bowl with pasta sauce and grate Romano cheese on top.
